My first and most important piece of advice in any wedding or elopement is; be true to yourselves.

Most non-religious ceremonies involve a symbolic ceremony or vow exchange. The great news is by doing this, you can choose almost any part of the country. 

Getting legally married in Spain can be complex for non-residents. Religious ceremonies can require in-depth paperwork. You can legally wed in your home country or if you are in Southern Spain you can easily legalise your union (in English) in nearby the British territory of Gibraltar. The union is legally recognised globally, including in the US.
